Just occurred to me – many states are considering “cottage industry” legislation encouraging commercial baking and pastry making in home kitchens by multitudes of folks no more savvy in food safety than DeFusco’s.
The cottage industry movement stands to bring more heartache than economic growth. All it takes is a few used egg crates and a big order for baked goods from a local retirement home. In the excitement, what entrepreneur could resist storing baked shells in those handy boxes?

  • This is a sad situation!! We need better health inspectors to check these things out.
