I heard a great talk today by my friend, Dave Theno, who is the now retired head of food safety at Jack in the Box. He told the packed audience of meat producers that he still keeps a picture in his briefcase of one of the children who died in the 1993 E. coli O157:H7 outbreak. He told us that whenever he made a food safety decision, he always had that child’s picture in his mind.
