THIS ARTICLE PROVIDES A GOOD PERSPECTIVE AS TO THE EFFECT REGULATORY EFFORTS HAVE ON FOOD SAFETY. THE REGULATORY EFFECT ON FOOD SAFETY ESPECIALLY AT THE LEVEL OF FOOD SERVICE IS A MIXED BAG. ON THE ONE HAND WE NEED AGENTS BASICALLY TO HOLD THE LINE ON THE OTHER WE DO NOT SEE MUCH IMPROVEMENT IN THE LEVEL OF SANITATION OVERALL. MAYBE THIS IS DUE TO THE CULTURE OF THE INDUSTRY. HOWEVER, FEDERAL REGULATORS HAVE MADE PROGRESS WITH BASICALLY THE SAME ISSUES OF LANGUAGE BARRIERS AND CULTURAL INFLUENCES. FOODSERVICE SANITATION IS WHAT IT IS BECAUSE OF THE LACK OF MANAGEMENT OVERSIGHT AND THEREFORE WE HAVE A REACTIVE INSTEAD OF PROACTIVE FOOD SAFETY SYSTEM AT THIS LEVEL OF THE FOOD SUPPLY. CONFIRMED FOODBORNE ILLNESS OUTBREAKS AT THE FOODSERVICE LEVEL ARE STILL RELATIVELY RARE EVENTS. SOME FS OPERATORS JUST TAKE THEIR CHANCES AND HOPE FOR THE BEST AND DO NOT REALLY MANAGE FOOD SAFETY AT ALL OR KEEP RECORDS ON CONTROLS. THEN IF AN OUTBREAK SHOULD OCCUR, THEY CANNOT RELY ON RECORDS OF CONTROLS AS A DEFENSE.

I just wanted to comment that I am one of Bill Marler's former clients that became infected with e.coli which turned into HUS. Bill Marler not only devotes his life to helping victims of food borne illnesses, but he truly cares about each and everyone of his clients. Bill has become like a second dad to me. I wish that I could put into words how much this man means to me.

I have already recieved my settlement, but Bill continues to send me e-mails just asking how I'm doing. He's crazy busy right now, but if I call or e-mail him I always get a response FROM HIM. Bill was a God send into my life, and I have no idea what my future would look like if I had not recieved his help.
